Ingredients:

 200g cheese “Siera gabaliņš” with sun dried tomatoes and garlic 400g

canned tomatoes 200g

tomato paste

1 onion

2 garlic cloves

1l vegetable or chicken broth

basil

olive oil

salt

pepper

For pancakes: 400ml milk

150g flour

1 egg

basil

oil for cooking

salt

sugar


Onion and garlic should be cleaned and chopped. Heat oil in a kettle with a thick bottom and cook onion and garlic there until they turn golden. Add chopped tomatoes with juice, tomato paste and broth and cook it under a cover for 15 min. Add salt and freshly grind black pepper. If tomatoes are still whole, blend them and heat it once again! Prepare cheese pancakes. Mix flour with milk and egg, add a little salt and sugar. Cook pancakes. Grate cheese and pour it over still hot pancakes, add a basil leave and roll them. When pancakes cool down, cut them in small pieces. Tomato soup shall be served hot with pancakes and decorated with grated cheese and basil leaves.
